What is the best red lean meat in the market to buy?

Look into getting beef that has about a 93/7 or something along those lines. That means it's 93% lean and you will only have 7% fat in the entire cut of meat. As far as red meats go in steak form or cutlets, you should look into buffalo (which is much lower in fat than beef) or any type of wild game.

Also if you decide to get anything higher in fat then the 97/3 which some stores just dont carry, try rinsing your beef after cooking, or boiling the beef and then draining it after. This significantly decreases the amount of fat contained in the ground beef.

What about flank steak, is real lean. I was told by several meat cutters. True or not...
