1 ¼ cups flour
1 ½ cups rolled oats
1 tbs cinnamon
½ tsp Nutmeg
Pinch ginger
1 tsp Vanilla
1 tsp Baking Powder
1 tsp Baking Soda
1 cup Applesauce
1 cup non-fat yogurt
1/3 cup fat free rice milk (or soy-milk)
15 packets "SweetnLow"
1 egg white
½ cup Golden Raisins
cooking spray (No Fat)
Preheat Oven 400 Deg
Combine Dry ingredients in a mixing bowl. In a separate bowl, whisk together yogurt, egg white and milk until well blended.
Add this mixture to dry ingredients and mix well. Coat two 6 muffin tins with cooking spray. Fill with batter until within ¼ inch of the top. Bake till brown.
